The dressing is slightly punchy but balanced with the addition of brown sugar.

The chicken absorbs the dressing too, keeping it moist.

Bring a large pot of salted water to a boil over high.

Add snap peas to boiling water; cook, undisturbed, until tender-crisp, about 5 minutes.

Transfer snap peas to ice water; let stand 5 minutes.

Gradually whisk in oil until emulsified.

Set aside 1/4 cup dressing in a small bowl for serving.

Garnish with additional pistachios and mint.

Serve with reserved dressing.
