Sweet potato casserole with meringue is every bit as delicious as the classic, but with less sugar.

Ingredients

4 1/2lb.sweet potatoes, scrubbed (about 5 large [15 oz.

Prick sweet potatoes all over using a fork.

Place on an aluminum foil-lined large rimmed baking sheet.

Bake in preheated oven until very tender, 1 hour, 10 minutes to 1 hour, 20 minutes.

Let cool slightly, about 10 minutes.

Reduce oven temperature to 350F.

Carefully peel potatoes, and place flesh in a large bowl; discard skins.

Remove and clean beater blades.

Coat an 11- x 7-inch baking dish with cooking spray.

Spoon potato mixture into prepared baking dish, and spread into an even layer.

Bake at 350F until edges start to pull away from sides of dish, about 30 minutes.

Spoon meringue over hot potato mixture, spreading and swooping decoratively, leaving 1/4-inch border around all edges.

Bake at 350F until meringue is golden brown, 10 to 15 minutes.
