Heat 4 tablespoons of the oil in a 12-inch cast-iron skillet over medium.
Using a 2-tablespoon scoop, carefully drop 6 balls of batter (1 inch apart) into skillet.
Transfer to a paper towel-lined plate.
Repeat procedure twice, adding 1 more tablespoon oil per batch.
