Topping the drink with sparkling water gives it a nice effervescent finish that quenches your thirst perfectly.
Ingredients
1 1/2lb.cucumbers, cut into 1-in.

2Tbsp.fresh lemon juice(from 1 large lemon)
2Tbsp.simple syrup

Pour through a fine mesh strainer into a medium bowl or 3-cup container; discard solids.
Add ice, and top with sparkling water.
Garnish with fresh mint.
