Get a little extra mileage out of your Thanksgiving turkey with this pasta bake.

6oz.low-moisture mozzarella cheese, shredded (about 1 1/2 cups)
Directions
Preheat oven to 375F.
Grease a broiler-safe 13- x 9-inch baking dish with cooking spray.
Heat olive oil in a medium saucepan over medium.
Add collards, mushrooms, and garlic.
Cook, stirring occasionally, until collards are wilted and mushrooms are tender, 5 to 7 minutes.
Add pasta, turkey, and reserved cream mixture; stir to combine.
Transfer mixture to prepared baking dish.
Cover with aluminum foil, and bake in preheated oven until bubbly, about 15 minutes.
Remove from oven, and remove foil; top evenly with mozzarella.
Bake at 375F until cheese is melted, about 5 minutes.
Increase oven temperature to broil, and broil until cheese is golden brown, about 5 minutes.
Remove from oven, and let rest 15 minutes before serving.
