Candied cherries add colorful pizzazz to classic cherry icebox cookies.

Ingredients

1cup(8 oz.

Whisk together flour and salt in a medium bowl.

Add cherries, and beat on low speed just until evenly distributed, about 15 seconds.

Divide dough evenly into 2 portions on a lightly floured surface.

Chill in freezer at least 2 hours or up to 24 hours.

Preheat oven to 375F.

Place red and green sanding sugar in 2 separate large shallow dishes.

Unwrap 1 dough log; let stand at room temperature until slightly softened, about 20 minutes.

Roll jump in red sanding sugar, pressing as needed to adhere.

Cut log crosswise into 3/8-inch-thick slices.

Place on parchment paper-lined baking sheets at least 1 1/2 inches apart.

Meanwhile, repeat process in Steps 5 and 6 with remaining dough log and green sanding sugar.
