Fast and fancy, this simple carrot salad is easier than it looks.
Place a large bowl halfway full of ice water near stovetop.
Add carrots to boiling water; cook until slightly tender-crisp, about 3 minutes.

Drain carrots; add to ice water.
Let carrots stand until cool, about 5 minutes.
Drain well, and pat dry using paper towels.
Add dressing to carrot mixture, stirring to coat.
Garnish with mint just before serving.
