Place fruit in bottom of slow cooker.
Toss with granulated sugar, cinnamon, ginger, salt, and fresh lemon juice.
Stir together oats and remaining ingredients.
Spoon over apple mixture.
Cover and cook on HIGH 3 to 4 hours.
